Fit Friday: Quick & Easy Zucchini Pizza

Some of my favorite foods are high-calorie, high-carb. That’s why I love when I find healthy alternatives to these decadent dishes. One of these such substitutions are zucchini pizzas. It’s become a staple in my home and I make it constantly. Not only is it much healthier than a regular slice of New York pizza, but it’s quick and easy to make. Not to mention flavorful and delicious. This is a great dish you should try if you’re on a low-carb or Keto Diet.

Below you’ll find my no fuss recipe for Zucchini Pizza.

Ingredients:
1 Large Zucchini per person
Roma or Cherry Tomatoes
Low-Fat Mozzarella
Fresh Basil
Oliva Oil
Salt & Pepper
Garlic (powdered ot fresh)
Your favorite pizza toppings

Instructions:
1. Preheat the oven to 375º

2. Cut the ends off of each zucchini and then cut them in half lengthwise. Peel the bottom of each Zucchini half to stabilize each piece (so that it doesn’t wobble and all of your toppings stay in place).

3. Place the zucchini on a baking sheet and drizzle with olive oil. Sprinkle some salt, pepper and garlic powder on each piece. You can even use garlic salt for a two-birds-one-stone option. Whatever you have in your pantry works.

4. Top the zucchini pizza boats with slices of mozzarella (you can also use shredded mozzarella), tomatoes and fresh basil. Then place the baking sheet in the oven for about 20-30 minutes.

5. Serve on a plate with knife and fork.

Feel free to sprinkle some parmesan cheese and as well any other toppings you like. I’ve added some salami sopressata for my husband’s pizzas since he likes pepperoni. You can also cut the zucchini into medallions for an easy-to-hold option for children or party hors d’oeuvres.
