Today is St. Patrick’s Day and it’s a pretty big deal here in New York City. Not only do we have a large annual parade to celebrate this day but all of NYC gets in on all the fun. I started my day with a green tea and one of my favorite green juice recipes. This juice contains spinach, celery, apples (green and red), a carrot and a splash on lime juice. It’s delicious and full of vitamins. I try to always start my day like this.

Green Salad

I had an green kale salad for lunch. Kale is one of my favorite leafy greens. It’s also a staple in my diet as I’m border-line anemic and need to regularly consume iron-rich foods like Kale. I love to marinate it in lemon juice and olive oil for a few hours before serving it with toasted almonds and parmesan cheese. It’s super easy and nutritious.
