Fit Friday: Spaghetti Squash

I recently went to a Vive Mejor Social Hour hosted by Ana Quincoces of Real Housewives of Miami fame and beauty expert Mario Anton. It was a wonderful event covering everything from the latest beauty trends, to easy Latino recipes and products you can/should find in any home. This event inspired today’s Fit Friday post.

Who doesn’t love pasta? Unfortunately, heavy carbs (like pasta) are a pain to burn off. I’m always in search of healthy but delicious alternatives and I’ve found one that even my husband loves: Spaghetti Squash!

Here is a simple and unbelievably delicious meal you can easily prepare at home. You’ll be amazed by the taste and ease of this dish.

1. Cut a medium to large Spaghetti Squash in half lengthwise. Evenly coat each half with salt, pepper and olive oil before placing them face down on a cooking sheet in a 450 degree oven for 30 to 40 minutes.

2. Scrape all of the pulp from within each half and place in a bowl. Don’t worry if you accidentally rip through the skin.

If you cut through the skin, simply wrap tin foil around squash to keep the pieces in place. We’ll be using the skin of the squash as the serving bowl!

3. Pick your favorite Ragù brand sauce. I’m using this traditional Old World Style Marinara sauce for this recipe. 

4. Mix your sauce with the squash pulp. Feel free to add any additional ingredients here (I like sun dried tomatoes).

5. Place the squash back in squash skin.

6. Cover your squash halves with low-fat mozzarella cheese.

7. Place them under the broiler for a few minutes until the cheese becomes golden brown.

8. Serve and sprinkle with Parmesan cheese, red pepper flakes and/or your favorite garnish (as shown at the top).

9. Enjoy!
