In this post, I’m sharing the recipe for a dish I made using the soba noodles included in my Japan box. this soba noodle broth bowl is delicious and super easy to make. It’s a perfect weeknight dish for chilly fall and winter days.

1. Bring a large pot of water to a boil. Add the soba noodles and cook until tender (about 6 to 8 minutes).

 2. When cooked, drain the noodles and rinse with cold water to stop them from cooking further.

3. Refill the pot with water and bring to a boil over high heat. Then reduce the heat to a simmer.

4. Chop up some scallions, cilantro and any other vegetables you’d like to add to your broth.  I’m keeping this dish vegetarian but you can feel free to add some chicken or whatever protein you prefer.

Domesticated Me Tip: Save time and a few cents by purchasing the Chopped Asian Blend salad mix by Dole. It contains just about every veggie I love in many Asian dishes (cabbage, snap peas, etc.).

5. Add your vegetable mix to the pot and soy sauce. Cook on low heat for about 5 to 10 minutes.

To serve, add some noodles to your soup bowl.

Then add the broth with the vegetable mix over the noodles.
